The Assistant Kitchen Manager is responsible for supporting the day-to-day operation of the Farm Boy GTA Central Kitchen. Reporting to the Assistant Plant Manager and in communication with the Plant Manager and VP Manufacturing, as well as the Chef Category Manager and Chef Operations, the successful applicant will be responsible for the execution of the daily production, packaging and billing of retail products. The performance of those duties must occur with a respectful approach to all employees, customers and suppliers and in a manner consistent with the Farm Boy Way.
Major Responsibilities:
- Assist with the coordination of production operations and ensure daily production requirements are met and are within standard labour and yields.
- Manage order administration including order desk and order processes for retail and direct customer orders.
- Oversee and direct staff in the proper preparation and packaging of products.
- Check quality and freshness of incoming products as well as product for sale.
- Coordinate, review and prepare food and supplies orders.
- Investigate and resolve customer or store complaints, credit claims and concerns.
- Respond to customer requests for custom catering and prepare proposals and quotes.
- Prepare and update staffing plans (weekly and daily) in accordance with business volumes.
- Train, direct, coach and assist staff as required on products and business systems.
- Draft and provide input on employee reviews.
- Assist in organizing and leading regular staff meetings.
- Manage booking of deliveries and couriers and ensure product is appropriately packaged for shipment.
- Assist with documentation of recipes, preparation instructions and product costs.
- Ensure compliance with Government regulations and Health and Safety standards at all time.
- Conduct regular inventory counts for food and supplies including period end inventory.
- May be requested to undertake other related duties on a periodic basis.
Qualifications
- Typically requires completion of a related post-secondary program plus 1 to 3 years of culinary/kitchen management experience in food service retail or production operation or an equivalent combination of education and experience.
- Successful completion of a Farm Boy approved Food Safety Course plus Level A First Aid and Basic CPR certification, or the commitment to complete within 6 months.
- Experience with planning and producing food in a high volume and fast paced environment.
- Hands-on team player with the demonstrated ability to lead staff in meeting production goals.
- Successful completion of Level 1 and 2 Health and Safety certification or the commitment to complete within 6 months.
- Good working knowledge of sanitation and food safety principles and risks.
- Good computer skills and working knowledge of automated systems and tool including Microsoft Suite.
- Good organizational, time management and communication skills.
- High standards of cleanliness and order.
- Must be able to work a flexible schedule including afternoons, evenings, weekends and holidays
Work & Sensory Environment:
- Required to wear cumbersome protective clothing or equipment during shift.
- Lack of control over pace due to multiple and/or tight deadlines beyond one’s control.
- Ability to work in a cool environment for prolonged periods (4 to 6 degrees Celsius).
- May be required to lift, carry and/or handle heavy objects.
- Performing repetitive motions in a cold environment and standing for extended periods of time.
