Chef de Partie

Constance Prince Maurice, a luxurious resort in Mauritius, is seeking a talented and passionate Chef de Partie to join our culinary team. In this role, you will be responsible for overseeing a specific section of the kitchen, ensuring the highest standards of food preparation and presentation to deliver exceptional dining experiences for our guests.

• Take full responsibility for the assigned kitchen section

• Prepare, cook, and present dishes according to the hotel’s standards and recipes

• Ensure mise-en-place is prepared and ready before service

• Supervise and guide Commis Chefs and Demi Chefs in your section

• Ensure food quality, taste, and presentation are consistently maintained

• Monitor portion control and minimize wastage

• Ensure hygiene, cleanliness, and food safety standards (HACCP) are strictly followed

• Ensure proper storage and correct labelling of food items

• Assist in stock control and report shortages or wastage to Sous Chef

• Maintain equipment and report any malfunction

• Participate in menu development and special events when required

• Ensure smooth operation of the section during service

Qualifications

• Diploma or Certificate in Culinary Arts or equivalent

• Minimum 2–3 years experience in a similar position in a hotel or restaurant

• Good knowledge of kitchen operations and food safety standards

• Ability to work under pressure in a fast-paced environment

• Strong organizational and teamwork skills

• Good communication skills

• Flexible to work shifts, weekends, and public holidays
