The Heavy Duty Porter is responsible for providing superior service to both the internal and external guests. They are also responsible for performing cleaning duties as directed by the Lead Steward, such as duties in the dishroom and ensuring cleanliness of the culinary area.
The Heavy Duty Porter:
- Ensures the cleanliness standards of the entire culinary area(s) as set forth by the Executive Chef and Health Department.
- Provides superior guest service, positive interactions with guests and team members, and has the resiliency to deal with difficult situations in all types of business conditions, and harbors the ability to work harmoniously with other departments and team members.
- Empties and cleans garbage cans.
- Empties grease barrels and trays.
- Cleans floors, walls, and ceilings.
- Sorts garbage.
- Cleans floor drains and grease traps.
- Cleans kitchen equipment, grills, fryers, ovens, etc.
- Works as a member of the dishwashing team placing soiled items in the proper racks or containers to ensure effective cleaning while processing in the dishwashing equipment.
- Inspects, removes, and properly stores all clean items from the dishwashing machine.
- Manually washes steamers, tilt skillets, deep fryers, and food preparation equipment that cannot be loaded into the dishwashing machine.
- Supplies dishware to food preparation stations as needed; removes soiled dishware and cooking equipment from food preparation stations.
- Keeps work area (floor, machine, shelving, carts, etc.) clean at all times.
- Performs miscellaneous duties, such as polishing silver, working in storeroom and preparing for banquets, special events, as assigned.
Qualifications
- Ability to work in environments with varying levels of crowds, noise and smoke.
- Position occasionally works outside and is subject to all weather conditions.
- Ability to work with various types of chemicals; proper precautions must be taken and proper personal protective equipment worn.
- Ability to effectively and efficiently move around work area.
- Ability to inspect and clean areas of responsibility.
- Must be flexible to work varying shifts and time schedules as needed.
- Ability to use machines and equipment used, such as but not limited to, mops, sweepers, scrubbers, commercial dishwashing machine, push carts and dispensers.
- Prior janitorial experience preferred but not required.
- Must be able to obtain and maintain all licenses / certifications required by Federal, State, and Gaming regulations.
- Must be at least 18 years of age.
The skills necessary of this position are typically acquired through a minimum of two months’ on-the-job training or through related experience.
