About You
You will bring:
- Strong organisational skills with experience in stock control, ordering and labour planning
- A passion for grilling and expertise in meat cuts, cooking methods and quality assessment
- Excellent attention to detail and a commitment to excellence
- Flexibility to work a 24/7 rotating roster including weekends and public holidays
- Strong communication skills and the ability to lead and support a diverse team
- Specialty in Western or Italian cuisine (highly regarded)
- Sound business acumen to assist in managing food and labour costs
Job Description
- Oversee daily kitchen operations, ensuring exceptional quality, presentation and timing aligned with Crown Resorts standards
- Lead stock take, monitor inventory levels and complete accurate documentation
- Manage ordering, supplier relationships and product quality checks
- Coordinate rostering and labour forecasting to optimise productivity and meet financial targets
- Support menu development and maintain consistency across all dishes
- Provide coaching, mentoring and leadership across the team
- Ensure full compliance with food safety, HACCP and OH&S standards
Qualifications
Cert 3&4 in Commercial Cookery

The Role
Crown is the ultimate destination for memorable dining experiences, with offerings ranging from casual restaurants to premium venues. Junction Grill is now seeking an enthusiastic and dedicated Sous Chef to join our culinary leadership team.
In this role, you will deliver joyful guest experiences while taking ownership of key operational areas. You will play a pivotal part in maintaining high standards of quality and efficiency through:
- Leading stock take processes, ensuring accurate inventory management
- Managing ordering and supplier coordination to guarantee availability and freshness
- Supporting and overseeing team scheduling, ensuring effective labour coverage across service periods
- Demonstrating strong grill experience, particularly in high‑volume, fast‑paced environments
- Applying strong meat knowledge to preparation, quality control, portioning and cooking techniques
As part of the leadership team, you will also:
- Demonstrate an enthusiastic and collaborative approach within a large team
- Assist Senior Chefs in overseeing kitchen operations, daily preparation, and maintaining Crown’s standards of food quality, presentation and safety
- Bring creativity, leadership and a strong understanding of traditional and modern Western cuisine
