The Role
The Chef de Cuisine (CDC) leads the culinary program for The Terrace, overseeing day-to-day kitchen operations, menu execution, and team development. This role works closely with the Executive Chef to maintain high culinary standards while ensuring smooth service, operational efficiency, and strong team culture.
The CDC is responsible for leading the kitchen team, maintaining consistency across all dishes, and ensuring systems are in place for prep, service, and organization. This position requires strong leadership, deep culinary knowledge, and the ability to operate calmly and effectively in a fast-paced environment.
- Leadership & Operations
- Lead daily kitchen operations for The Terrace
- Uphold and enforce culinary standards, recipes, and kitchen systems
- Train, mentor, and develop cooks through structured leadership and coaching
- Maintain a clean, organized, and efficient kitchen environment
- Ensure smooth service and clear communication with Front-of-House teams
- Lead by example to create a disciplined, collaborative kitchen culture
- Culinary Execution
- Oversee fresh pasta production, prep systems, and station organization
- Maintain consistency, quality, and presentation across all dishes
- Execute seasonal menu changes and specials in collaboration with the Executive Chef
- Uphold Italian culinary integrity while embracing California seasonality
- Ensure strong mise en place standards and smooth service execution
- Administrative & Financial
- Manage ordering, inventory, and cost controls
- Assist with scheduling and labor management
- Monitor production levels, food waste, and kitchen efficiency
- Ensure compliance with health, safety, and sanitation standards
- Participate in menu development, R&D, and new dish execution
Requirements
- Strong background in Italian cuisine
- Comfortable and confident with fresh pasta production
- Experience running a line and managing a kitchen team
- Strong communication skills and leadership presence
- Ability to maintain standards, consistency, and cleanliness
- Calm under pressure and solutions-oriented
- Hungry to learn, grow, and take on greater responsibility
- Flexible and adaptable with an understanding of private-club culture
- Experience with wood-fired cooking
- Experience in chef-driven, seasonal, or Michelin-leaning kitchens
- Ability to collaborate on menu development
- Interest in long-term growth within the company
