Ice Cream Maker

We are seeking a passionate and skilled Ice Cream Maker to join our esteemed team at Gelataria San Giorgio, a renowned century-old establishment located within the iconic Reid's Palace. The successful candidate will be responsible for producing exceptional artisanal ice creams and sorbets, incorporating both traditional Italian techniques and the unique regional flavours of Madeira. This role requires a commitment to excellence, creativity, and an unwavering focus on delivering a luxurious and memorable culinary experience for our discerning guests.

The Main Responsibilities are:

• Prepare and produce a diverse range of high-quality artisanal ice creams, gelatos, and sorbets daily, following established recipes and ensure consistent texture, flavour, and presentation.
• Develop and innovate new recipes that highlight Madeira's regional ingredients and seasonal produce.
• Maintain strict adherence to recipe specifications and portion control to minimize waste and ensure cost-effectiveness.
• Select, inspect, and prepare the finest quality ingredients, including fresh fruits, dairy products, flavorings, and local specialties.
• Monitor and manage inventory levels of ingredients, placing orders as needed to ensure continuous production.
• Ensure proper storage and rotation of all ingredients to maintain freshness and prevent spoilage.
• Oversee the attractive display and presentation of all ice cream and sorbet offerings in the gelataria.
• Maintain impeccable hygiene and cleanliness standards in the production area, equipment, and display cases, adhering to all food safety regulations (HACCP).
• Operate and maintain specialized ice cream making equipment safely and efficiently.
• Perform routine cleaning and basic maintenance of all machinery
• Work closely with the Pastry Chef, and other pastry and culinary team members to integrate ice cream offerings with overall dessert menus and special events.
• Collaborate with the front-of-house team to ensure seamless guest experience and provide product knowledge as required.

• Strong understanding of seasonality, local ingredients, and sustainable sourcing.
