About the role
As our Food & Beverage Assistant Service Manager, you will support the Food & Beverage Service Manager in overseeing the day-to-day operations across the restaurant, breakfast, bar, room service, and conference & events areas. You will play a key role in delivering exceptional guest experiences, supervising and developing the team, and ensuring all brand, quality, and safety standards are consistently met.
Bistro Mirlot is a cosy French restaurant located in the heart of Mercure London Bankside. Celebrated for its authentic French cuisine, warm atmosphere, and attention to detail, Bistro Mirlot offers guests a true taste of France in the heart of London. Our team takes pride in delivering an exceptional dining experience, combining classic dishes with a welcoming and relaxed environment.
As part of an exciting new project, we are also introducing a fresh concept for our bar, inspired by Discover Local. This new concept will showcase local flavours, ingredients, and drinks, creating a unique and dynamic space for guests to enjoy. Together, Bistro Mirlot and the new Mercure Bankside bar project represent a fantastic opportunity to be part of something special, blending traditional French hospitality with a modern, local twist.

What we are looking for:
Previous supervisory experience within Food & Beverage operations
Strong knowledge of restaurant, bar, and/or conference & events service standards
Good understanding of stock control, cost management, and upselling techniques
Sound knowledge of food hygiene, health & safety, and liquor licensing regulations
Excellent communication and leadership skills with the ability to motivate a team
