We're looking for an experienced and detail-oriented Sous Chef specializing in Indian cuisine to join our culinary team in Kathmandu, Nepal. In this role, you will work closely with our Head Chef to oversee kitchen operations, maintain exceptional food quality standards, and lead our kitchen staff in preparing authentic Indian dishes. You will be instrumental in ensuring that every plate that leaves our kitchen reflects our commitment to culinary excellence and authentic Indian flavors.
- Oversee daily kitchen operations and manage food preparation workflows to ensure timely and efficient service
- Supervise and mentor kitchen staff, providing guidance on cooking techniques, food safety protocols, and quality standards
- Prepare and cook a variety of Indian dishes using traditional and contemporary techniques
- Maintain strict adherence to food safety and sanitation standards, including proper storage and handling of ingredients
- Manage inventory, monitor food costs, and minimize waste while maintaining quality
- Collaborate with the Head Chef on menu development, recipe refinement, and seasonal specials featuring regional Indian cuisines
- Ensure consistent plating presentation and portion control across all dishes
- Train kitchen staff on proper knife skills, cooking methods, and the use of specialized Indian cooking equipment
- Monitor and maintain kitchen equipment, reporting maintenance needs promptly
- Assist in sourcing high-quality ingredients, including specialty Indian spices and local produce available in Kathmandu
Qualifications
- Minimum 5 years of professional kitchen experience with at least 3 years specializing in Indian cuisine
- Proven supervisory or lead cook experience in a fast-paced kitchen environment
- Comprehensive knowledge of Indian cooking techniques, regional cuisines, and authentic spice blending
- Strong knife skills and proficiency with specialized Indian cooking equipment
- Excellent organizational and time management abilities
- Demonstrated ability to lead, train, and motivate kitchen staff
- Food Safety Certification or equivalent qualification
- Culinary training or formal culinary education (preferred)
- Fluency in English; knowledge of Nepali language is a plus
- Ability to work collaboratively with the Head Chef and kitchen team
- Strong attention to detail and commitment to maintaining high quality standards
- Experience with inventory management and food cost control
